Alpha Tolman is named after a philanthropic dairy farmer who established the Greensboro library in 1900. His grandfather, Enoch, was one of the original settlers of the town. The cheese named in his honor is produced at the renovated Jasper Hill Creamery in Greensboro, Vermont. Alpha Tolman is now crafted with their “Sax Rennet,” a traditional rennet made from cultures derived from previous batches and calf rennet.
